Meal Plan Monday #2: Back to Reality

The holidays are over, and we are happy to be getting back into our routine. We are hoping this return to our everyday life will mean that the baby boy will start sleeping through the night again!!
I am excited to be doing another Menu plan this week. Last week it did wonders for us, and I was able to keep the grocery bill for the week under $100, I am hoping to do the same this week.
Mon: Baked Chicken, mushrooms, artichokes, olives
This is one of my favorite family recipes - its really simple
1 lb Chicken (breast or thigh usually)
1 can olives - drained
1 can artichoke hearts - drained quartered
8 oz mushrooms sliced
1/2 cup white wine
1/2 cup chicken broth/stock
Italian seasonings, salt, pepper
Heat oven to 350
Put Chicken in pan
cover with sliced mushrooms, olives, artichoke hearts
pour white wine and broth over everything
season well with Italian seasonings (I use a mix purchased that way)
Cover, cook until done (this will depend on chicken used - usually around 30 - 40 minutes)
Tue: Tofu Veggie Stir Fry (Weight Watchers pg124 carry over from last week)
Wed: Tasty Pork Tenderloin (Fix It and Forget It pg 90…carry over from last week, never made it)
Thur: Fried Chicken, veggies, potatoes
Fri: Hockey Game - no cooked dinner
Sat: Top Sirloin
Sun: Greek lamb (Weight Watchers pg91 repeat of last week…soooo yummy)
The Shopping List
After taking stock of what I already have this is what I need for the above menu plan plus any items needed for breakfasts or lunches. This weeks list is short enough so I am stocking up on some sale meats that are always good to have on hand.

Menu planning is great and I love some of your foodie ideas. I am going to copy some if that’s o.k.
Sounds pretty tasty!
Now I want to do the chicken thing; not necessarily as you did it, but there was a pasta sauce my father used to make with chicken, olives, mushrooms and artichokes…. I should see if I can recreate it.
